Homemade instant pudding mixes make dessert a snap and save money too! You can use these mixes in any recipe that calls for a pudding mix, such as the classic Banana Pudding. Or make up a batch to eat plain.
To make mix:
VANILLA
1 cup vanilla sugar
3/4 cup powdered milk
3/4 cup arrowroot powder, tapioca starch, or corn starch
1/2 teaspoon good salt
Mix together and put in mason jar.
CHOCOLATE
Same as above but add 1/2 cup cocoa powder
1/2 cup is same as one packet store bought for vanilla. 3/4 of a cup works for chocolate due to the extra volume of the cocoa powder.
To make pudding:
2 cups milk
1/2 cup mix for vanilla, 3/4 cup mix for chocolate
1 teaspoon vanilla
In saucepan whisk the cold ingredients together. Bring to boil, whisking constantly. Turn down heat to a simmer and cook till it coats a spoon, about 3 more minutes, stirring constantly.
Cool in covered pan, then refrigerate.
For Banana Pudding:
One recipe vanilla pudding, shown above and chilled
Two cups fresh whipped cream, stabilized whipped cream, or cool whip
3 medium bananas sliced
1/2 box vanilla wafers
Have a trifle bowl or individual glass pudding ramekins handy. In medium bowl mix the prepared pudding with the prepared whipped cream. Fold in carefully.
Place layer of vanilla wafers on bottom of trifle bowl. Cover with layer of pudding mixture, then a layer of banana slices. Repeat till all the ingredients are used, with top two layers being banana, then pudding mixture.
Garnish each serving with a wafer. If you are using individual ramekins, use same method, carefully splitting ingredients among the servings.
